A classic, light summer dish that focuses on the delicate flavors of fresh porcini mushrooms. Simple to prepare yet rich in taste, it unfolds the subtle mushroom aroma in combination with olive oil, garlic, and a hint of lemon. Perfect as a first course or light main dish.
Ingredients
Spaghetti, young fresh porcini mushrooms, garlic, extra virgin olive oil, salt, pepper, lemon juice, fresh basil, freshly grated Parmesan cheese
Instructions
1. Thinly slice the young, fresh porcini mushrooms. Slice or finely chop the garlic. 2. Heat olive oil in a large pan and warm the garlic over low heat until fragrant. Add the mushroom slices and gently toss, without frying them heavily. 3. At the same time, cook the spaghetti in a large pot of generously salted water until al dente. 4. Drain the spaghetti, reserving 1-2 tablespoons of the starchy pasta water to add to the mushroom mixture in the pan. 5. Add the cooked spaghetti to the pan with the mushrooms and mix everything well. 6. Season with a splash of lemon juice, salt, and pepper. Add fresh basil. 7. Arrange the spaghetti on a plate, sprinkle with freshly grated Parmesan cheese, and serve immediately.
