A creamy and aromatic risotto that perfectly showcases the earthy flavors of the porcini mushroom.
Ingredients
400g risotto rice, 50g dried porcini mushrooms, 1 onion, 2 cloves garlic, 1.5L vegetable broth, 100ml white wine, 50g grated parmesan cheese, 2 tbsp olive oil, salt, pepper, fresh parsley.
Instructions
1. Soak porcini mushrooms in warm water. 2. Finely chop onion and garlic and sauté in olive oil. 3. Add rice and sauté until translucent. 4. Deglaze with white wine. 5. Gradually stir in the broth and mushroom soaking water. 6. Stir in grated parmesan cheese and season with salt and pepper. 7. Garnish with fresh parsley.
Important Warning!
Make sure to stir the risotto rice constantly to prevent it from burning.
