This burger is a highlight for mushroom and meat lovers. It combines the hearty texture of a beef patty with the delicate, peppery notes of chanterelles fried in butter. The creamy sauce with lemon and thyme perfectly rounds off the flavour experience, while field salad, tomatoes, and onions provide the necessary freshness.
Ingredients
Burger buns, ground beef, chanterelles, mayonnaise, crème fraîche, lemon, fresh thyme leaves, field salad, tomatoes, red onions, butter, garlic, olive oil, salt, pepper.




Instructions
1. For the lemon cream, sauté onions and garlic in a small pan with a little butter. Deglaze with lemon juice and let it reduce briefly. Remove the pan from the heat, let the mixture cool, and then mix with a 50:50 ratio of mayonnaise and crème fraîche, along with freshly chopped thyme. Season with salt and pepper. 2. Clean the chanterelles and sauté them in a pan with a little butter until golden brown. 3. Toast the burger buns or fry the cut side in butter in a pan until golden. 4. Slice the tomatoes and red onions into rings. Wash the field salad. 5. Form the ground beef into patties and cook them in a pan or on a grill to your desired doneness. Season with salt and pepper. 6. Assemble the burger: bottom bun, a generous layer of the lemon cream, field salad, the patty, tomato slices, onion rings, and a good layer of the fried chanterelles. Spread lemon cream on the top bun as well before putting the burger together. Serve immediately.
