A simple yet delicious dish that combines the tender texture of shaggy inkcaps with the sweet and sour flavour of balsamic vinegar and fresh basil. Perfect as a quick starter or light main course, served with crispy garlic bread.
Ingredients
Fresh shaggy inkcaps, shallots, olive oil, balsamic vinegar, fresh basil, salt, pepper, roasted garlic bread.





Instructions
1. Carefully clean the shaggy inkcaps and slice them or cut into halves. Finely dice the shallots. 2. Heat olive oil in a pan. Sauté the shallots and mushrooms until lightly browned. 3. Deglaze with a splash of balsamic vinegar and let it reduce briefly. 4. Stir in fresh, chopped basil. Season with salt and pepper to taste. 5. Toast the garlic bread. 6. Arrange the fried mushrooms on a plate with the garlic bread and serve immediately.
Important Warning!
Shaggy inkcaps must be prepared when young and white, before the gills turn black and melt away. The mushroom should therefore be cooked as soon as possible after harvesting. Never consume this type of mushroom with alcohol, as it can cause adverse reactions. Only use clearly identified mushrooms!
